COO, Fuzzy’s Taco Shop


Lifelong foodservice professional, Scott Shotter, has successfully led a diverse group of restaurant organizations including corporate, franchise and non-traditional venues where he has honed his operational leadership skills throughout his 32-year career.
Prior to joining Fuzzy’s Taco Shop, Scott served as President of Condado Tacos, and CEO of Backyard Burgers before that. Notably, Shotter served as Vice President at Moe’s Southwest Grill and was an integral part of the leadership team responsible for the explosive growth of the brand between 2009-2016, growing Moe’s from 200 to 700 units.
Scott joined Fuzzy’s Taco Shop as Chief Operating Officer in October 2021. In his role at Fuzzy’s Taco Shop, Scott is responsible for implementing the infrastructure, processes, and procedures to ready the brand for its anticipated growth over the next five years. Additionally, Scott is passionate about preserving the culture and unique experience of the brand as it continues to grow.
Additionally, Scott has served as a member of the IFMA Small/Midsize Chain Council, a group of senior management professionals who are creating new insights and collaborative best practices to drive the community forward.
